Cooking dried beans couldn’t be a simpler process. All you need is a little time and patience. The result is exponentially better than canned beans (which I use often as well!). And if those dried beans are from @rancho_gordo, then you are really in for a treat. Do yourself a favor and head to their website and stock your pantry.

Dressed my @wildalaskancompany Sockeye salmon up with the most delicious coconut red Curry sauce. The addition of yellow miso steers this away from a traditional Thai Curry but dare I say it makes even better?? Served with some jasmine rice and stir fried veggies. Here’s the run down…
Start by sautéing some shallot, garlic, and ginger in some coconut oil. Add a couple tbsp of yellow miso, a tbsp of lemongrass paste, 1 - 2 tbsp red Curry paste, and 2 tbsp brown sugar. Let this mix caramelize a bit, then deglaze with some sake or mirin (hey…I said this wasn’t traditional). Add a can of good quality coconut milk and a cup of chicken stock and simmer until the Curry reduces and thickens. Finish with some fish sauce, Sambal, and fresh lime juice to taste. Oh my…I could drink this stuff. I like to broil my salmon filets for just a couple minutes then remove the skin and nestle them into the curry to finish cooking. I also added a few shrimp for the heck of it. This curry would be uh-mazing on just about anything!
Shout out to @kenjilopezalt from @seriouseats for the great quality Thai Curry paste (@maeploy_kitchen) and fish sauce (@redboatfishsauce) recommendation that you can get on Amazon…total game changer! Lemongrass paste (@mekhalaliving) is also on Amazon.

Starting my day with a @powerinherbs Golden Latte with @mindbodygreen collagen. So warm and cozy with a little spice and sweetness.
Recipe⬇️
1 tsp @powerinherbs Golden Mix, 1 scoop unflavored collagen, 1 tbsp @lairdsuperfood Original Creamer, 1tsp raw honey, 1 cup warm almond milk.
➡️ Add everything but the almond milk to a large mug. Add 4 ounces of very hot water and blend well with a small stick blender/milk frother (or blend in a blender). Add the warm almond milk. Enjoy!

I don’t usually get too excited over meals made with ground turkey, but this Italian Turkey Meatloaf is changing that for me. Is it the crispy pancetta on top? Could it be the bits of chopped sun dried tomatoes and Calabrian chilis in every bite? Or perhaps it’s the copious amount of Parmesan cheese? I don’t know but I just want to keep eating it. Mondays are rough. Mondays after Christmas break are EXTRA rough! I thought a big pot of my Green Chicken Chili with @rancho_gordo garbanzo beans would make it a little less rough 😋. I was right. Thanks to @wildgrainbox, my kitchen smells like a French bakery! They went from my freezer to the table in about 20 minutes and then it was all buttery, flaky, tasty goodness. Especially smothered with some guava jam from @jackiesjams. Dang I love it when good food is this easy.
